It is a typical salami of the Norcia tradition. It is exclusively produced without adding preservatives or colouring, but using only fresh spices, ground at the time of salting. It is mainly used in cooking (amatriciana or carbonara pasta), but foodies like it sliced too, and eat it with fresh or grilled bread.
